Chewy Coconut Meringue Bites

Chewy Meringues?  Yes, created by accident, loved by all!  These are my go to, easy, delish cookies!  The coconut extract adds a subtle background flavor. I’ve made these so many times, for baby showers, neighbor treats, parties etc., that I have these down to a science!

 Coconut Meringue Bites

Ingredients:

  • 6 egg whites (room temperature)
  • 1/2 tsp cream of tarter
  • 2 tsp vanilla
  • 1/4 tsp coconut extract
  • Dash of salt
  • 2 cups sugar

Directions:

Add egg whites, cream of tarter, vanilla, coconut extract and salt to stand mixer (note: you can use a hand mixer, but it takes longer and is a lot of standing and mixing).

With whip attachment, whip for 2 minutes on level 6 of 10.  After the 2 minutes, slow down the whip to level 3 and slowly ad the sugar.  Turn whip back to level 6 for 4 additional minutes until stiff peaks form.

I don’t have a piping bag, but a “multi purpose storage gallon” Ziploc bag works perfect.  Cut the corner of the bag, insert the threaded coupler with one thread popping out.  Slip on the tip (I use a Wilton #32.  Screw the nut on the end.  Scoop the meringue into the bag.  I put ALL of the meringue in the bag at once since I hate adding more to a messy bag.

Cover two sheet cake pans with parchment paper.  Pipe the meringues on the parchment.  I go around in a spiral 3 times.  Make each one pretty small so it is bite sized.  I usually end up with 8 across by 14 long so 112 per sheet (but, if there are any extra spaces, I shove a mini one any where I can).  You may have a little left over, but should fill two full sheet cake pans.  Place in a preheated 275 degree oven.  I have a small range with an average single oven.  No worries, just stagger the sheets and rotate half way through cooking.  (note: please excuse my filthy sheet cake pans, I’ve tried 3 different Pinterest “cleaning” solutions to remove the baked on stains with no success, must buy new ones.)

If you want to try my “Chewy” meringues, cook them for 30 min.  If you want traditional crisp meringues, cook them for 45 min.  Then, if you can stand it, let them cool.  Then pop one in your mouth and watch them disappear quicker than you made them.  These never last more than a few hours in my house, and we are talking over 250 cookies!  But they do have a lot of egg whites so that’s a protein right?
